Bus Stop Muffins from Lorain Glawe
New Fangled Old Fashion Bran Muffins
(170 calories each)
1 ¼ c. flour
½ c. sugar
1 T. baking powder
¼ teaspoon salt
2 c. Kellogg’s All Bran cereal
1 ¼ c. fat free milk
1 egg
¼ c. vegetable oil
1. Preheat oven to 400 degrees
2. In mixing bowl stir together flour, sugar, baking power, and salt. Set
aside.
3. In large mixing bowl combine All Bran with milk. Let stand 5 minutes.
Add egg and oil. Beat well. Add flour mixture, stirring only until combined.
Portion batter evenly into 12, 2 ½ inch muffin pans coated with cooking
spray.
4. Bake 20 minutes or until lightly browned.
5. Serve warm.
