Fancy French Toast
1/3 cup
preserves or orange marmalade
1/3 cup sweetened
flaked coconut
8 slices of bread (honey wheat berry
is good)
3 eggs
1/2 cup milk
1 Tablespoon butter
2 Tablespoons
powdered sugar
large heart shaped cookie cutters
Spread 4 slices of bread with the preserves or marmalade on
one side. Then sprinkle with coconut. Top with remaining four
slices to make sandwiches. Cut sandwiches into large heart shapes.
Melt 1/2 Tablespoon of butter in a large skillet
over medium heat. Beat eggs and milk together with a fork in a
medium size bowl. Dip 4 of the sandwiches in the egg mixture,
then fry to a golden brown in the skillet. Repeat with the
remaining sandwiches, egg mixture, and 1/2 Tablespoon of butter.
Serve warm with a dusting of powdered sugar. Clean up the
kitchen.
