3 Layer Banana Cake with Caramel Butter Icing - from Joyce Cowles

2 Cups Bananas (about 3 bananas)

1 teaspoon baking soda

Mash bananas (w/mixer is okay) and add soda to them. Set aside.

½ cup cold water

1 box cake mix (yellow or white)

½ cup oil

1 cup pecans

2 eggs

Mix the oil, water, and eggs and then the cake mix and last the chopped pecans. Add the banana mixture to this and mix thoroughly.

I just used Pam spray in my cake pans. Pour equal amounts of batter in 3 round cake pans. Bake at 350 degrees for about 20-25 minutes. Let cakes cool on cookie racks in the pans.

Caramel Butter Icing

½ cup butter/margarine

1 cup light brown sugar

2 ½ cups powder sugar

¼ cup milk

Sift the powder sugar and set aside. Put butter, brown sugar and milk in a sauce pan and bring to a boil. Add this to the powder sugar and mix. You need to put icing between each layer and you have to do this quick as the icing gets hard really fast.
