American Corn Pudding

Thanksgiving Focus
American Indians introduced the early European settlers to a grain that they
called "maize," which today we know as corn. American Indian Corn Pudding is
much like cornmeal mush, but it is now usually served for dessert.
This pudding, much like what the first pilgrims might have eaten with American
Indians, can be enjoyed by your family this year.
Materials
• 1 cup yellow cornmeal
• 4 cups water: 1 cup cold water and 3 cups hot water
• Pinch of salt
• 1 to 2 teaspoons sugar (to taste)
• Whipping cream or vanilla ice cream
• Large saucepan
• Medium-size mixing bowl
• Spoon
How to Do
1. Mix cornmeal and 1 cup of cold water in a bowl.
2. Pour 3 cups water into saucepan and bring to a boil.
3. Add pinch of salt.
4. Stir in the cornmeal and water mixture. Until the entire mixture is added,
keep stirring so that lumps won't form.
5. Return mixture to a boil and then reduce heat.
6. Cook over reduced heat, stirring occasionally, for 10 more minutes. The
mixture should become very thick.
7. Pour mixture immediately into bowls and top with whipped cream, vanilla
ice cream, or a little sugar.
