Pizza Chili
Chili Cook Off Winner

The Secret is Out!

1 lb. ground sirloin
1 lb. ground chuck (thick chili grind)
1 small package of pepperoni pieces
1 small package of Canadian bacon
1 tbsp. olive oil
1 large green bell pepper - diced
1 large red bell pepper - chopped
4 large cloves of garlic - minced
1 large white onion - cut-up
2 8 oz. cans of chopped green chili (yes, I like green chili on my pizza)
1 jar of "Italian sausage and garlic" spaghetti sauce (next to the Ragu)
1 tbsp red chili powder
2 small boxes (or cans) of chicken stock. (feel free to substitute beer since beer goes well with pizza)
1 tbsp crushed red pepper (this is where the heat comes from)
1 tbsp "Emeril Lagasse" essence
Optional (I did not use) : black olives, mushrooms, green olives, jalapeno's, chalula sauce (for spicy), beer, anchovies
a little salt
a lotta cracked black pepper
large white or wheat crackers (pizza base)
lots of shredded mozzarella cheese (to go on top)
In a large pan, heat the olive oil and brown the sirloin and chuck in it.
When brown, remove 95% of the fat. (To determine 95%, pour all of the fat
into a measuring cup, get out your calculator and multiply the measured
amount by 0.95. Then take that amount out using a spoon and pour back in
the rest. An alternate method [which is the way I went] take out all but
the last half tablespoonful out of the pan).

Put in the garlic, green pepper, red pepper, white onion and green chili.
Add salt and pepper. Let the veggies cook down about 10 minutes until you
can stir without the mixture falling out of the pan. (If you chose a good
sized pan to begin with, cook until tender).

Stir in the jar of spaghetti sauce. and heat through.
Pour in the chicken stock, red chili powder, essence, and crushed red
pepper. Quarter the Canadian bacon and pepperoni and add to the mixture.
Simmer for 1 hour. Taste and add more salt and pepper.

Make sure the kids are in their costumes and ready to go to church. Pour
mixture into crock-pot and drive to church.

To serve, take a cracker for the base, pour on the "pizza chili" and top it
with lots of shredded mozzarella.

To dispose of the leftovers:
1) Pour "pizza chili" onto a crusty Italian bread for a "sloppy joe" style
sandwich
2) Pour mixture over spaghetti noodles (after all it is just a spicy
spaghetti sauce)
3) Pour over baked potato. Add sour cream and lots of mozzarella.
4) Make pizza with it.
5) Use it as a layer in your next lasagna
6) Take the white filling out of a Twinkie and replace with "pizza chili"
to surprise an unsuspecting friend.
